This recipe is a little more challenging because you have to taste as you go. I don’t always use the same amount of chicken – just depends on what I have on hand or how hungry the kids are.
You can find all the ingredients at the grocery store or on Amazon.
What You Need
- 3-4 chicken breasts, cut into small cubes (at least 1 per person)
- One box of stir-fry rice noodles
- 1 T. minced garlic
- 1/4 cup reduced-sodium gluten-free soy sauce – tamari
- 3 T brown sugar
- 3 T mirin
- 2 tsp. sesame oil (this adds a ton of flavor don’t leave it out).
Directions
In a small bowl mix together soy sauce, sugar, and garlic.
I prefer to cube up the chicken breasts and cook them in the airfyer.
In a large pot of boiling water, cook rice noodles according to the package directions. I wait to cook the noodles until the chicken is done.
Drain the noodles and return them to the large pot. Add the chicken and sauce. Toss to coat. Serve immediately.
Cooking Tips
I like to taste it before serving. If it tastes too salty add a little more Mirin. It is sweet and will help cut the salt of the soy sauce. It took me a few tries to get it right.
