Mom’s Gluten-Free Banana Bread

Banana bread is quick and easy to make. 

What You Need

  • 2 cups gluten-free all-purpose flour (260 g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup granulated sugar (97 g)
  • 1 cup mashed banana, about 2 medium (230 g)
  • 2 large eggs
  • 1/2 cup brown sugar (112 g)
  • 2/3 cup milk (160 ml)
  • 1/3 cup oil (80 ml)
  • 1 tsp vanilla extract


Preheat oven to 350 Degrees. Coat a 9×5 inch loaf pan with cooking spray.

In a large bowl, whisk together the glute free flour, baking powder, baking soda, salt, and granulated sugar. Set aside. 

In a medium bowl, whisk together the mashed banana, eggs, brown sugar, milk, oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until combined.  

Transfer the batter into the prepared pan. Bake for 50-60 minutes or until a toothpick inserted into the middle of the loaf comes out clean. 

Cool the bread in the pan for 20 minutes, then cool it completely on a wire rack. 

Storage note:

Keep the bread wrapped tightly in plastic wrap at room temperature for up to 4 days.
