Chicken Parmesan

Directions

This recipe is a huge family favorite and is usually requested for holidays and weekend meals. 

I’m partial to Schwan’s boneless skinless chicken breasts. Make sure you are using a good quality chicken breast. If it has a tendon running through the middle of it you’ll want to remove it before preparing.

Make sure the chicken is completely thawed. Place chicken breast on a hard surface that you aren’t concerned about being damaged – a cutting board works well. Using a tenderizer flatten the chicken breasts until they are thin. 

Mix bread crumbs with Italian seasoning. Amounts are based on the size of the chicken breasts and how much seasoning you like. Don’t be afraid to be generous with the Italian seasoning it adds lots of great flavor. 

Spray on side of the chicken breast with non-stick cooking spray and lay that side down into the seasoned bread crumbs (the spray helps the breadcrumbs stick). Spray the other side and flip it into the breadcrumbs. Once the chicken has been coated in bread crumbs set it aside and repeat with the rest of the chicken. 

Preheat your electric skillet to 375 degrees. Spray each bread crumb coated breast with non-stick cooking spray. Place the sprayed side down in the skillet. Spray the other side. Don’t turn the chicken until the breadcrumbs are crispy and brown. When one side is done turn it and allow the other side to cook. 7-8 minutes per side depending on size and thickness of your chicken breasts. 

In the meantime preheat your oven broiler. Line two baking sheets with parchment paper. When the chicken is done place 2 breasts on each cookie sheet allowing plenty of space in between them. Cover the top of the chicken breast with a layer of shredded mozzarella cheese. Place the chicken under the broiler so the cheese can melt and get slightly browned. Keep a close eye on it so it doesn’t burn. Once the cheese is melted remove the pans from the oven. Let the chicken rest for a few minutes. 

Serve the chicken with sauce, pasta, parmesan cheese, or whatever you prefer. 

Cooking Tips

I use this large electric skillet. I’m able to cook all 4 chicken breasts at once. 

This tenderizer is what I use to flatten and tenderize the chicken.
